  7. 1 tsp Oregano
  8. 1 tsp Salt
  9. 1/2 tsp Sugar
  10. 1 tsp Kashmiri red chilli powder (for vibrant colour)
  11. 6 tbsp Ketch up
  12. For REFRIED BEANS;
  13. 1 tbsp Oil + Butter
  14. 1 tsp Garlic, finely chopped
  15. 1 medium size Onion, finely chopped
  16. 1 medium size Tomato, blanched and puréed
  17. 1/2 cup Rajma, soaked overnight and boiled
  18. 1/2 tsp Salt
  19. 1 tsp Kashmiri red chilli powder
  20. 1 tsp Coriander-Cumin powder (optional)
  21. 2 tbsp Ketch-up
  22. 2.5 ml Lemon juice
  23. 2 tbsp Coriander, chopped
  24. for SOUR CREAM:
  25. 1 cup Cooking cream(room temperature)
  26. 1/2 cup Curd (amul)
  27. 2-3 Lemons juice
  28. Pinch Black pepper powder
  29. as per taste Salt
  30. 1/2 tsp Parsley, finely chopped
  31. FOR NACHOS:
  32. 1/2 cup Water
  33. Pinch Baking Soda
  34. Pinch Turmeric powder
  35. 1/2 cup Maize flour
  36. 4 tbsp All-purpose flour/Wheat flour/ Corn flour
  37. as per taste Salt
  38. as per taste Pepper
  39. For DOUGH:
  40. 2 cups Wheat flour
  41. 2-3 tbsp Olive oil
  42. 1 tsp Salt
  43. 1 tsp Baking powder
  44. 1/4 tsp Baking soda
  45. as required As required Curd
  46. FOR SALSA TOPPING:
  47. As required Pizza sauce
  48. As required Mozarella, Cheddar cheese
  49. Few Refried beans
  50. Few Olives
  51. Few pieces Capsicum
  52. 1/4 cup Corn
  53. slices Few Tomato,
  54. slices Few Onion,
  55. 2 Green chillies
  56. Handful Coriander
  57. As required Sour cream
  58. As required Nachos
  59. 1 tsp or as per taste Italian seasoning

Steps to make to make Mexican pizza (No oven, No refined flour, No yeast)

  1. To make PIZZA SAUCE(1/2), 1. Place a pot of water on the stove and bring it to a boil. Drop the tomatoes into the boiling water. Remove them after 7-8 minutes or when the skin begins to peel. Allow it to cool. - Make a purée, if you like smooth texture of the sauce. OR - Chop them coarsely, if you like chunky texture of the sauce. 2. Heat olive oil and butter in the pan. Add garlic and finely chopped onion to it. Sauté it for 1-2 minutes or until the raw smell is gone.
  2. To make PIZZA SAUCE(2/2), 3. Add tomato purée/coarsely chopped tomatoes, chilli flakes, oregano,salt, sugar, kashmiri red chilli powder and ketch up. Mix it well and cook on a low flame for about 20 minutes or until you get desired thickness. 4. Once cooled down completely, store it in an airtight container. It remains fresh for 7-10 days when stored in refrigerator and a month when stored in freezer.
  3. To make REFRIED BEANS(1/2), 1. Heat olive oil and butter in the pan. Add garlic and finely chopped onion to it. Sauté it for 1-2 minutes or until the raw smell is gone. 2. Add tomato purée/coarsely chopped tomatoes, rajma, salt, sugar, kashmiri red chilli powder, coriander-cumin powder and ketch up. Mix it well and cook on a low flame for about 10 minutes or until you get desired thickness.
  4. To make REFRIED BEANS(2/2), 3. Take it off the flame and add lemon juice and coriander. 4. Once cools down completely, store it in an airtight container. It remains fresh for 7-10 days when stored in refrigerator and a month when stored in freezer.
  5. To make SOUR CREAM, 1. In a large bowl, whisk together cooking cream and curd until you get nice smooth texture. 2. Add lemon juice to the bowl, whisk again. 3. Add black pepper, salt, parsley and mix well. 4. Serve chilled.
  6. To make NACHOS(1/2), 1. Heat water in a pan. Add baking soda and turmeric powder when it starts to simmer. 2. Then, add maize flour and fold well. Turn off the flame and keep it aside for about 12 minutes. 3. Once It has cooled down partially, add all-purpose flour, salt and pepper, and knead a soft dough(crackfree).
  7. To make NACHOS(2/2), 4. Take small portion of a dough between two plastic sheets and roll it into a thin tortilla. Tip- Apply some oil on plastic sheets before you start rolling. Tip- Use papad maker, if available. 5. Then, cut it into triangular pieces. Prick them with a fork and deep fry OR bake them at 180 C until crisp.
  8. To make PIZZA BASE(1/2), 1. In a large bowl, wheat flour, olive oil, salt, baking powder and baking soda. Gradually add the curd and knead a soft dough; let rest for 15 minutes. 2. Take old kadhai, take about 1/2 kg salt in it. Place metal ring in the center and put steel plate above it. Cover it and preheat on a high flame for about 15 minutes.
  9. To make PIZZA BASE(2/2), 3. Divide the dough into 4 portions(120 gm each) and roll it to 2-3 mm thickness. Prick the pizza base so that it doesn’t inflate. Tip: To obtain crispy crust, use semolina/all-purpose flour for dusting. 4. Once kadai is preheated enough, brush steel plate with some oil and bake pizza for about 12 minutes. Repeat the process for rest.
  10. To ASSEMBLE, 1. Spread some pizza sauce on the base, add some mozzarella+cheddar cheese on it. 2. Top it with, refried beans, olives, capsicum, corn, tomatoes, onion, green chilli and coriander. Cook in a pan on a law flame for about 12 minutes, covered till cheese melts. 3. Add nachos, sour cream and sprinkle some Italian seasoning. Serve hot.
