- Add 1 cup of veg stock and stir until the rice has absorbed the stock. Repeat 1 cup at a time until the rice is soft and creamy about 30 minutes.
- Next add the baby spinach and stir until the spinach has wilted. Next add the 2 other tbls butter and the cup of parmesan grated cheese stir in and serve.
